Slow cooker meal. *You can use tomato paste instead of vegetable juice.

Recipe Ingredients for Borsch

1 1/4 lbs cabbage
4 beets
2 medium carrots
2 medium tomatoes
2 medium potatoes
1 medium onion
3 cloves garlic
1 lb lean beef
1 tbsp sugar
2 tbsp red wine vinegar
32 oz low sodium chicken broth
12 oz vegetable juice
1 tsp olive oil
1 tbsp dill
1/2 tsp pepper

Recipe Directions for Borsch

  1. Brown beef in 1 tsp olive oil. Cut up vegetables and put them in slow cooker, add minced garlic. Combine vinegar, broth, sugar, vegetable juice, and pepper in a separate bowl. Mix and add to slow cooker.

  2. Cook on low for about 10 hrs or on high for 4 to 4 1/2 hrs.
