A vegan alternative to spaghetti bolognese

Recipe Ingredients for Borlotti Bolognese

2 tsp olive oil
2 cloves garlic
1 onion
100 g button mushrooms
1 1/2 tsp bouillon, swiss vegetable, powder
1 tsp dried herbs (mixed)
1 1/2 tbsp tomato puree
240 g tomatoes, red, ripe - canned, whole, regular pack
100 g borlotti beans, dried
35 g quinoa
1 black pepper

Recipe Directions for Borlotti Bolognese

  1. (Prepare beans in advance by soaking them overnight)

  2. Cook beans in water until tender then drain

  3. Heat oil in pan

  4. Add garlic, onions - 2 minutes

  5. Add mushrooms - 5 minutes

  6. Add stock, herbs, tomato puree, tomatoes, beans, pepper - SIMMER - 10 minutes
