Border Paella Recipe

yummy veggie rice dish, goes great with shrimp meat and/or calamari

Recipe Ingredients for Border Paella

3 tbsp olive oil
1 large onion
6 garlic cloves
2 tsp salt
1 tbsp sweet paprika
2 tbsp minced thyme
2 tbsp minced oregano
2 large bell peppers
4 medium tomatoes
1 1/4 cups arborio rice
3 cups vegetable broth
225 g green beans
1/2 cup cilantro
1/2 cup parsley

Recipe Directions for Border Paella

  1. heat oil and saute onion until translucent

  2. add garlic, chile flakes, salt and saute until the garlic and onions are soft.

  3. Add the remaining salt, spices, herbs, peppers, and tomatoes and simmer covered for 10 minutes.

  4. stir in rice to coat well.

  5. Heat the stock or water and pour it into the pan. cover and reduce the heat to low. cook until the rice is tender and most of the liquid has been absorbed (about 30 minutes)

  6. Steam beans until tender. Stir into the cooked paella. Season with cracked pepper, fresh herb.
