Easy to make and delicious polenta like aunt Nina used to make. Try it for lunch or dinner. Bring it to your next pot luck. Serves six.

Recipe Ingredients for Boo's Best Polenta

2 cups bob's red mill corn grits
6 cups water
1/2 teaspoon salt
10 ounces organic garbanzo beans
1 teaspoon minced fresh garlic
28 grams fresh parsley
14 grams fresh oregano
28 grams fresh basil

Recipe Directions for Boo's Best Polenta

  1. Bring grits, water, and salt to a boil in a large pot while stirring constantly.

  2. Add remaining ingredients and lower heat to medium low.

  3. Continue stirring until mixture is thickened - about 30 minutes.

  4. Spoon into a non-stick baking dish or lightly spray a baking dish.

  5. Let 10 to 15 minutes to set. Invert onto large flat serving dish.

  6. Cut into six equal pieces.

  7. Garnish with paprika or fresh herbs.

  8. Optional: drizzle with olive oil when serving.
