Total comfort food. Delish. One serving is a WHOLE MEAL. Great with salad on side. Top is nice and crunchy, inside smooth and creamy.

Recipe Ingredients for BONNIE'S CHEESY ORZO

4 cups low sodium chicken broth
16 ounces orzo pasta
3 tbsp. butter
1 onion, chopped
8 ounces mushrooms, sliced
1 cup of Marsala wine (or another cup broth)
1/2 cup heavy cream (or substitute)
4 ounces (about a cup) fontina cheese, shredded
4 ounces (about a cup) mozzarella cheese, diced
1 cup frozen peas, thawed
1/2 tsp salt
1/2 tsp fresh pepper
1/2 cup bread crumbs
1/4 cup parmesan cheese, grated
1 tsp dried thyme

Recipe Directions for BONNIE'S CHEESY ORZO

  1. Preheat oven to 400 degrees F. Butter a 9 by 13 inch baking dish.

  2. Bring chicken broth to boil over medium heat in medium saucepan. ADD orzo and cook until almost tender. About 7 minutes. Pour orzo and broth into large bowl, set aside.

  3. Meanwhile, melt the butter over medium high heat in medium skillet. ADD onions and saute until tender, about 3 minutes.

  4. ADD mushrooms and continue to saute until the mushrooms begin to turn golden brown around the edges, about 7 minutes. ADD the marsala (or broth). Cook until reduced by half, about 5 minutes. ADD the mushroom mixture to the orzo in the bowl. ADD the cream, fontina, mozzarella, peas, salt, pepper. STIR to combine. POUR the mixture into the prepared baking dish.

  5. In a small bowl, COMBINE bread crumbs, parmesan, and thyme. SPRINKLE the mixture on top of the pasta. BAKE until golden brown, about 25 minutes.
