Recipe Ingredients for Boneless pork roast in Dijon mustard and spices crust

3 tbsp coriander seeds
3 tbsp mustard seed
3 tbsp fennel seeds
1 1/2 tbsp peppercorn
3 tbsp olive oil
3 lb boneless pork roast
1/2 cup dijon mustard
3 garlic cloves
1 1/2 tbsp lemon zest
3 tbsp chive

Recipe Directions for Boneless pork roast in Dijon mustard and spices crust

  1. Heat the spices in a saucepan to enhance their flavor. Let cool down.

  2. Using a mortar and pestle (or any other convenient instrument), coarsely (? - I'm French, not sure of the word!) crush the spices, then add salt.

  3. Add oil an butter in the same saucepan and fry quickly the roast until it is light brown on every sides.

  4. Mix mustard, chives, spices and lemon zests. Spread the mixture on the roast.

  5. Heat at 160 °C (325 °F) for 40-60 min, until thermometer indicates 68 °C (155 °F).

  6. Take out of the oven, cover and let sit for 10-15 min before serving.
