Recipe Ingredients for Boneless Pork Ribs with Olives

1/4 cup flour
2 tsp fennel seed (anise), ground
1/4 tsp black pepper, ground
2 lbs pork ribs, boneless country style
1/3 cup olive oil, divided
1 fennel bulb, stems and leaves trimmed, cut lengthwise onto 1/2" thick slices
1 medium onion, cut into 1/2" dice
8 garlic cloves, minced
1 tsp rosemary, fresh chopped
1/2 cup wine, white dry
1 cup chicken broth
1 cup canned diced tomatoes, drained
1/2 cup kalamata olives, pitted and halved
2 tbsp Italian parsley, fresh chopped

Recipe Directions for Boneless Pork Ribs with Olives

Mix flour, fennel seed, salt and pepper in a medium bowl. Dredge meat, pat off excess, reserve mix. Heat half the oil in a large skillet over medium-high heat. Brown pork about 3 minutes per side. Plate pork and set aside. Add half of the oil to the skillet. Dredge fennel slices and brown on both sides about 2 minutes. Arrange fennel in bottom of slow cooker and place pork on top. Cook onion in skillet over medium heat for about 3 minutes until tender but not browned. Add garlic and rosemary and stir. Stir in seasoned flour mix until onions are evenly coated. Stir in wine and bring to a boil. Stir in chicken broth and tomatoes until slightly thickened. Pour into slow cooker. Cover and cook 3-4 hours on high or 8 hours on low. Scatter olive and parsley over meat and cook 5 minutes more. Serve immediately.
