Recipe Ingredients for Bolo's Black Beans and Rice

1 pound black beans
5 tablespoon olive oil
1 medium sweet onion
1 1/2 cups brown rice
2 medium tomatoes
1 tablespoon chili powder
1 teaspoon curry powder
1/2 teaspoon garlic salt or garlic powder
1 Salt and pepper

Recipe Directions for Bolo's Black Beans and Rice

  1. Soak beans overnight in large bowl of cold water. Drain, transfer to a large saucepan and cover with cold water by 2 inches. Add salt and pepper to taste, bring to a boil over high heat, then reduce to medium heat and simmer until tender, 1 to 1 1/2 hours. Drain and set aside.

  2. Heat 3 tablespoons of oil in a medium saucepan over high heat (or 2 tablespoons butter and 1 tablespoon oil). Add the onion and cook until soft, 3 to 4 minutes. Add the rice and add 1 tablespoon salt (or to taste), chili powder, curry powder, and garlic salt/powder. Stir to coat in the mixture. Add 2 3/4 cups water, stir and bring to a boil over high heat. Reduce the heat to medium, cover the pan and cook until the water is absorbed and the rice is tender, about 35-45 minutes. Remove from the heat and let sit, covered, for 5 minutes. Remove the lid, fluff the rice.

  3. Transfer the beans and rice to a large pot, add the tomatoes and olive oil (alternatively, butter), and about 1/4 cup of water (more or less depending on tomato size and ripeness) and cook until the water is absorbed. If you prefer the tomatoes cooked, you can add them toward the end of cooking the black beans.
