Bolognese Sauce - Serves 6 over one pound of fettucine.

Recipe Ingredients for Bolognese Sauce

3 tbsp olive oil
1/2 onion
1 carrot
1 celery stalk
1 lb ground beef
1 lb ground pork
1 cup whole milk
1 cup dry white wine
28 oz whole tomatoes

Recipe Directions for Bolognese Sauce

  1. Saute first three ingredients in olive oil unitl soft (6 minutes).

  2. Add ground meat and salt and cook until no longer raw looking, but not brown (3 minutes).

  3. Add milk and simmer until milk evaporates and only clear fat remains (10-15 minutes).

  4. Add wine and simmer until wine evaporates (10 - 15 minutes).

  5. Add tomatoes and bring to simmer.

  6. Reduce heat to low so that sauce simmers just barely. Cook until liquid has evaporated, about 3 hours.
