Bok Choy with Red Peppers and Almonds for single serving: 2 tbsp almonds, 1 c bok choy, 1/2 c red bell pepper

160 g Almonds, blanched, sliced
1100 g Bok choy, sliced
500 g Red Pepper, sliced
2 tbsp olive oil

Recipe Directions for Bok Choy with Red Peppers and Almonds

  1. In a nonstick pan sprayed with veggie cooking spray, saute almonds until lightly browned, approx 1-2 minutes.

  2. Add red pepper and bok choy and saute until veggies begin to soften -- approx. 3 minutes.

  3. Season with salt and pepper.
