This is served even better cold than warm. It is a good summer soup! Vegetarian.

Recipe Ingredients for Bok Choy and Potato Soup

3 cups bok choy
2 medium carrots, shredded
3 cups scallions, shredded
6 large potatoes
4 quarts water
2 cups soymilk
1/4 tspn coriander
1/4 tspn salt
1/4 tspn black pepper
1/4 tspn cayenne pepper
1/4 tspn paprika

Recipe Directions for Bok Choy and Potato Soup

  1. Cut up 6 potatoes and pour into 4 quarts of boiling water. Add four cubes of vegetable base if you desire a more flavorful soup. When you have dissolved the bouillion set aside for yourself 4 cups of the water.

  2. While the potatoes are boiling in a sauce pan with a little water sautee the bok choy for 3 minutes. Next add the scallions and shredded carrots and sautee for at least 4 - 5 minutes. Begin adding your spices and stir.

  3. Set aside for yourself three cups of solid potatoes and the rest of the potatoes scoop out with a spoon with whole and dump in a mixer. Take 1 cup of the soymilk and put in mixer as well. Puree the potatoes and milk and dump back into pot with the potato/vegetable base in it.

  4. Dump the vegetables into the pot and heat and stir while you dump the last of the next 1 cup of soy milk in.
