Classic beef dish cooked in red wine

Recipe Ingredients for Boeuf Bourguignonne

2 lbs beef, braising steak cubed
1 tablespoon olive oil
1 tablespoon flour
3/4 pint red wine
1 tsp thyme
1 tablespoon (3) bay leaves
1 black pepper
2 cloves garlic, chopped
1 onion, sliced
7 oz smoked bacon, cubed
4 oz mushrooms, dark gilled sliced
8 oz shallots, peeled

Recipe Directions for Boeuf Bourguignonne

  1. Preheat the oven to Gas 1 or 130C

  2. Heat the olive oil in a casserole dish and brown the beef cubes on all sides a few at a time. Remove with a slotted spoon to a plate

  3. Cook the sliced onion in the pan juices.

  4. Return the beef to the pan, add the flour and stir to combine

  5. Add the garlic, thyme, bayleaves and black pepper and then stir in the wine a little at a time until all incorporated

  6. Put on a lid and transfer to the oven. Bake for 2 hours stirring occasionally

  7. Cook the bacon, peeled whole shallots and mushrooms in a little more oil and add to the casserole

  8. Cook for a futher hour, stirring occasionally.

  9. The dish is cooked when the beef is tender. Serve with wild rice and steamed vegetables
