Yummy whole grain breakfast scone

Recipe Ingredients for Bob's oat scones

1 cup steel cut oats
1 cup soy milk
1/2 cup oat flour
1 tbsp flax seed
1 cup whole wheat flour
1 tsp baking soda
1 tsp Splenda
1/4 tsp salt
1/3 cup raisins
4 tbsp I can't Believe It's not butter
1/2 tsp cinnamon

Recipe Directions for Bob's oat scones

  1. In a pie pan at 350 degrees, toast oats for 20 minutes, stirring every 5 minutes. Remove from oven and add 1 cup room temperature soy milk. Let sit 20 minutes.

  2. Increase oven temp to 400 degrees. Combine flours, baking soda, salt,Splenda and cinnamon in separate bowl. Cut in olive oil spread until crumbly. Add soaked oats and raisins. Stir till just combined.

  3. Dip hands in flour. Lift dough from bowl and shape into a round. Place on lightly greased baking sheet and cut into 8 - 10 wedges. Sprinkle with cinnamon and Splenda. Bake 15 - 20 minutes until lightly golden.
