Makes 8 servings



Add soy fake beef crumbles to the sauce mix. You can substitute spinach for the zucchini.

Recipe Ingredients for Blue's Vegetarian Lasagna

168 g lasagna noodles (9 pieces)
15 oz ricotta cheese
16 oz cottage cheese
24 oz spaghetti sauce
8 oz tomato sauce
1 c diced zucchini
1/2 c shredded parmesan
1/2 c shredded mozzarella

Recipe Directions for Blue's Vegetarian Lasagna

  1. Preheat oven to 350.

  2. Mix cottage and ricotta cheeses in a bowl.

  3. Mix spaghetti sauce, zucchini, crumbles in another bowl.

  4. In 13" x 9" baking dish, spread one layer of sauce, drop spoonfuls of cheese mixture across top of sauce about 1 inch apart, top with 3 noodles side by side in a single layer. Repeat layering twice.

  5. Top with remaining sauce the mozzarella and parmesan cheese.

  6. Bake for 30 minutes.
