Recipe Ingredients for Blueberry Zucchini Bread

2 eggs, lightly beaten
2 egg whites
1/2 c vegetable oil
1/2 c applesauce
3 tsp vanilla extract
1 c spenda sugar blend for baking
2 c shredded zucchini
2 c flour
1 c whole wheat flour
1 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1 tbsp cinnamon
2 c blueberries

Recipe Directions for Blueberry Zucchini Bread

Beat together eggs, oil, vanill, applesauce and sugar. Fold in the zucchini. Beat in dry ingredients and then gently fold in blueberries. Put in muffin cups and bake at 350 for 15 minutes or so.
