Recipe Ingredients for Blueberry Zucchini Bread

3 eggs
1/2 c. oil
1/2 c. unsweetened applesauce
3 tsp. Vanilla Extract
2 1/4 c. sugar
2 c. shredded zucchini
1 1/2 c. white flour
1 1/2 c. whole wheat flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 tbs. cinnamon
1 pint fresh blueberries

Recipe Directions for Blueberry Zucchini Bread

  1. preheat oven 350 degrees

  2. In a large bowl beat together egg, oil, applesauce, vanilla, and sugar. Fold in zucchini. Beat in flour, salt, baking soda, baking powder, and cinnamon. Gently fold in the blueberries. Transfer to 2 greased and floured loaf pans.

  3. Bake 60 minutes @ 350 or until a pick inserted into loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.
