Refreshing light blueberry muffins. Uses dates to substitute for white sugar.

Recipe Ingredients for Blueberry Yogurt Muffins

1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 1/2 teaspoon baking powder
45 grams (1/4 cup) honey dates, diced
1/2 teaspoon salt
1 teaspoon cinnamon
4 egg whites
285 grams (1 1/4 cups) plain nonfat yogurt
1/4 cup unsweetened applesauce
1 tablespoon lemon zest, grated
1 cup blueberries

Recipe Directions for Blueberry Yogurt Muffins

  1. Preheat the oven to 375F. Line muffin in with jumbo paper muffin cups.

  2. In a small mixing bowl, stir together the flour, baking soda, baking powder and salt. In another bowl, combine the dates, yogurt, eggs, apple sauce, cinnamon and lemon zest. Beat until thoroughly mixed.

  3. Add the dry ingredients and mix just until blended. Do not over mix.

  4. Gently fold in blueberries and then spoon the batter into the muffin tins, filling each cup about two thirds full.

  5. These should bake for about 15 minutes, or until the tops are browned, and a toothpick inserted into the middle comes out clean. When the muffins are done, let them cool in the pan. Remove and serve warm.
