Recipe Ingredients for Blueberry teacakes- gluten free

1 stick of butter, unsalted
4 egg whites
1 cup powdered sugar
1/4 c. rice flour
1 pinch of salt
60 blueberries
1/4 c. almond meal

Recipe Directions for Blueberry teacakes- gluten free

  1. melt butter over medium heat until nutty and brown remove from heat

  2. combine flour, sugar, almond meal (ground almonds) and salt

  3. Add egg whites to dry ingredients mixing on medium of tabletop mixer until all ingredients come together

  4. Turn to machine to low and add butter in a drizzle continue mixing on low until the batter is smooth

  5. spray muffin tin with lowfat spray

  6. spoon mixture into 12 muffin pan
