Recipe Ingredients for Blueberry Sunshine Muffins

1 c whole wheat pastry flour
1 c oat flour
1 1/2 t baking powder
1/2 t baking soda
1/4 t nutmeg
1/2 c sugar
1/2 t sea salt
2 bananas, mashed
4 oz Freshly Squeezed Orange Juice
2 T orange zest
2 t vanilla extract
1 T oil

Recipe Directions for Blueberry Sunshine Muffins

  1. Zest 2 oranges and then juice them, adding water or non-dairy milk if they don't make 1/2 c of juice.

  2. Combine the mashed banana, orange juice, zest, vanilla, oil, and sugar. Mix well.

  3. Stir in the flours, baking soda and powder, salt, and nutmeg.

  4. Divide into 12 lined muffin tins.

  5. Bake at 375 for 19-24 minutes.
