YUMMO! Simple, easy, and unbelieveably delicious too! NOTE: Use quick-cooking oats, and add in a scant 1/2 cup of Splenda for baking.

Recipe Ingredients for Blueberry Streusel Muffins

1 1/2 cups flour
1 cup wheat flour
1 cup dry oats
1/2 cup sugar
1 tablespoon baking powder
1 tsp baking soda
1/4 tsp salt
2 cups fat free yogurt
1/2 cup milk
3 tablespoons canola oil
3 tsp vanilla extract
1 egg
1 1/2 cup blueberries

Streusel:
2 tablespoons flour
2 tablespoons slivered almonds, chopped
1 1/2 tsp brown sugar
1 1/2 tsp butter, melted

Recipe Directions for Blueberry Streusel Muffins

Mix together the dry ingredients. Mix together the wet ingedients. Fold wet ingredients into dry. Fold in blueberries. Prepare streusel by mixing together the listed ingedients in a small bowl. Put muffin batter into prepared tins and top evenly with almond mixutre. Bake at 400 degrees for 15 minutes or until a toothpick comes out clean. Enjoy!
