Recipe Ingredients for Blueberry Streusel Bars w/ Lemon-Cream Filling

2 ounces unsalted butter, softened
6 ounces unsweetened applesauce
1 1/2 cups all purpose flour
1 1/2 cups whole wheat pastry flour
1 1/2 cups oats (rolled, not quick)
1 cup brown sugar, packed
1 teaspoon salt
1 teaspoon baking powder
1 egg, separated
7 ounces evaporated milk
7 ounces sweetened condensed milk
1/2 cup fresh lemon juice
1/2 teaspoon lemon zest
3 cups fresh blueberries, room temperature, washed and drained

Recipe Directions for Blueberry Streusel Bars w/ Lemon-Cream Filling

  1. Position rack in center of oven and heat to 350. Line a 9x13 metal baking pan with foil, leaving a 1" overhang on the ends. Lightly spray the bottom and sides of the foil with cooking spray.

  2. In a large bowl, combine flour, oats, sugar, salt and baking powder. Transfer 2 cups of this crumb mixture to another bowl (for topping). In the first bowl, mix in applesauce and egg white, then press into the bottom of pan to form a level crust. Tamp with bottom of measuring cup to even out if desired. Bake crust until it starts to form a dry top, 10-12 minutes.

  3. In second bowl (topping), blend butter completely into the flour mixture and set aside.

  4. Meanwhile, in a medium bowl whisk condensed milk, lemon juice, lemon zest and egg yolk. Let mixture stand for 5 minutes; it will begin to thicken.

  5. Sprinkle the blueberries evenly over the hot crust and then drop spoonfuls of the lemon mixture over the berries. Spread gently with a spatula to distribute more evenly, but take care not to crush the berries. It's okay if the lemon mixture isn't perfectly even. Bake until lemon mixture just begins to form a shiny skin, 7-8 minutes.

  6. Sprinkle reserved topping (second bowl of flour mixture) over the lemon-blueberry layer, pressing streusel between your fingers into small lumps as you sprinkle. Bake until filling is bubbling at the edges and the topping is brown, 25-30 minutes.

  7. Let cool in the pan on a rack until just warm, about an hour. Carefully lift out of the pan using foil overhang and transfer to rack to cool completely. Remove foil and cut into 24 bars when cool. Bars may be stored at room temperature for a few hours, but otherwise should be kept in the fridge.
