Recipe Ingredients for Blueberry Shortcake w/Biscuits

4 tablespoons butter, cold and cut into pieces
1 teaspoon baking powder
1 cup all-purpose flour
1 tablespoon all-purpose flour
1 cup blueberries
1/4 cup vanilla yogurt
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons buttermilk

Recipe Directions for Blueberry Shortcake w/Biscuits

  1. Preheat oven to 350 degrees.

  2. In bowl, fold flour, sugar, baking powder, and salt into butter until a coarse meal is formed.

  3. Add buttermilk and combine until dough is formed.

  4. Roll dough into a short roll. Cut into 5 pieces.

  5. Cut each piece in half and place each half together on greased baking sheet.

  6. Bake 15 minutes or until dough looks solid and still the same color - DO NOT wait for dough to become golden brown.

  7. Let biscuits cool.

  8. Combine chilled blueberries and yogurt.

  9. Cut cooled biscuits in half, spoon blueberries over bottom half of biscuit. Place other biscuit half on top. Serve cool.
