Recipe Ingredients for Blueberry Shortbread Bars


Shortbread crust:
1 cup smart balance
1/2 cup powdered sugar
2 cups flour
1/4 teaspoon baking powder

Blueberry filling:
1/4 cup sugar
1/4 cup flour
1 tablespoon lemon juice
2 cups frozen blueberries

Crumble topping:
1 cup packed brown sugar
1 1/4 cup oatmeal
3/4 cup flour
7 tablespoons smart balance
1 tsp cinnamon

Recipe Directions for Blueberry Shortbread Bars

  1. Heat oven to 350F. Spray a 9x9 pan with Pam.

  2. Add room temperature smart balance and powdered sugar to a mixing bowl. Whip with an electric hand mixer until well blended.

  3. Add flour and baking powder. Mix with a wooden spoon until all the flour and butter mixture are incorporated. With shortbread, I have to use my hands to "squeeze" the butter into the flour.

  4. Press shortbread into a 9x9 pan. Bake at 350F for 10 minutes, until slightly brown. Remove from oven and cool.

  5. While crust is baking, add sugar, frozen blueberries, and lemon juice to a saucepan over medium heat. Heat until blueberries are thawed and mixture is boiling slightly.

  6. Remove from heat. Add flour. Stir until thickened. Add blueberries to top of shortbread crust.

  7. In a separate bowl, add brown sugar, oatmeal, flour, and melted smart balance. Stir well until mixed through and mixture is crumbly. Spread or crumble over the top of the blueberries.

  8. Bake at 350 for 40 minutes, or until browned on top.
