Breakfast scones for a cheaper alternative to the bakery. Serve warm with butter and/or jam. Found this recipe in Parade Magazine, 1-2-3 Bake. While original recipe calls for raisins, I used dried blueberries and added a dash of vanilla extract and apple pie spice.

Recipe Ingredients for Blueberry Scones

1 large egg
1/2 c 1% milk
2 c flour
3 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
6 tbsp cold butter, cut into bits
3/4 c dried blueberries

Recipe Directions for Blueberry Scones

  1. Preheat oven to 400F. Whisk egg and milk together and dry ingredients in another bowl.

  2. Add butter bits into dry ingredient bowl. Using your hands, cut and rub mixture until it's pebbly. Add egg and milk to dry ingredients and mix with a fork until dough is evenly moist and sticky.

  3. Spoon mixture into foil-lined baking sheet or Pam-coated muffin pan and bake 20-22 minutes until scones are golden brown.
