Light and fluffy scones, very moist and yummy.

Recipe Ingredients for Blueberry scones

4 cups white whole wheat Flour
4 tsp Baking Powder
2 cup oakhurst Fat Free skim milk
1 tsp Vinegar red wine
1 tsp Salt
12 tbsp Light Butter Salted
3/4 cup Sugars, Granulated
1 tsp Vanilla Extract
2 cups blueberries

Recipe Directions for Blueberry scones

Mix milk, vinegar and vanilla together. This will sour the milk, thus creating a butter milk which is what you want so dont worry if you see it clumping this is supposed to happen. Set it aside. Save out both 1/4 cup if sugar to sprinkle the tops of you scones, and 1/4 cut of flour to dust your berries prior to mixing into dough. Then mix flour, salt, baking powder, and sugar together. Dice cold butter into small chunks, then add it to dry mixture. Take two butter knives, or if you have a tool used to cut butter into the flour use that, or you can use your food processor, and pulse a couple times. Cut the butter chunks into the flour mixture by using the two knives in a crisscross action until they are small pea size bits, or pulse your food processor untill the mixture looks coursely ground. Make a small well in the center of your butter flour mixture, and add the milk mixture to it . Gently folding together everythink until just mixed, you don't want to over mix, or the scones won't rise well. The batter will be wet. The take floured berries a fold into batter. On a generously floured surface pour dough into two equal separate sections. Flour each section well as you pat into a circular pie shape, about an 1 1/2 inch thick. Cut each pie, into eight pie pieces. Put on a greases baking sheet and sprinkle with sugar. You may need to wet the tops slightly for sugar to stick depending on how much flour you used to shape scones. cook for 20 minutes in a pre heated 400 degree oven.
