Delightful blueberry scones that don't break the diet or the bank. (A single batch cost me about $5.00 for the ingredients!)

Recipe Ingredients for Blueberry Scones (Gluten Free)

2 cups spelt flour
1 tbsp baking powder
1/2 tsp salt
1/3 cup olive oil
1/3 cup honey
1 tbsp vanilla extract
1/2 cup hot water
1/2 cup fresh blueberries

Recipe Directions for Blueberry Scones (Gluten Free)

  1. Preheat the oven to 375. Line a

  2. baking sheet with parchment paper. In

  3. a bowl, whisk the spelt with the baking

  4. powder and salt. Stir in the oil, agave

  5. nectar and vanilla. Stir in the hot water,

  6. then the blueberries.

  7. Scoop 8 mounds of batter 1/3 cup

  8. each onto the prepared baking sheet

  9. and lightly brush the tops with oil. Bake

  10. the scones for 20 minutes, or until

  11. golden. Let the baking sheet cool

  12. completely on top of a rack.
