Recipe Ingredients for Blueberry Ricotta Muffins

1/4 cup unsweetened applesauce
1/2 cup No Calorie Sweetener
5 egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 cup fat free ricotta cheese
3/4 cup flour
1/2 cup Almond Meal/Flour
1/4 teaspoon salt
1 teaspoon baking powder
2 cups fresh or frozen blueberries

Recipe Directions for Blueberry Ricotta Muffins

  1. preheat over to 350

  2. mix dry ingredients

  3. mix wet ingredients except cheese and berries

  4. mix wet and dry

  5. stir in cheese just until incorporated

  6. gently fold in 1 1/4 cup berries

  7. fill muffin tins

  8. press remaining berries onto tops of muffins

  9. sprinkle with splenda (optional)

  10. bake 18-20 min
