Recipe Ingredients for Blueberry Rice Pudding - ONLY 4 Weight Watchers Points!

1/2 cup fat-free evaporated milk
1/2 cup blueberries
1 tbsp molasses
1 egg white
1/4 tsp cinnamon
43 g brown minute rice

Recipe Directions for Blueberry Rice Pudding - ONLY 4 Weight Watchers Points!

  1. * FYI, rice is already cooked.

  2. Preheat oven to 350 degrees. Combine milk, molasses, egg white and rice in a medium bowl. Hand mix for 2 minutes. Let sit for a few seconds and stir in blueberries. Pour mix into pan, it's fine if the rice sinks to the bottom. Let cook in oven for 20 minutes or until top is golden brown. Let pan cool for about 10 minutes. Serve cold or hot, sprinkle with cinnamon.
