Recipe Ingredients for Blueberry, red currant, bran muffins

1 1/4 cup self-raising flour
250 g wholemeal flour
1 teaspoon cinnamon
1/2 cup bran
2/3 cup brown sugar
150 g blueberries
1/4 cup currants
1/4 cup apple juice
1 egg
1 cup skim milk
2 egg whites

Recipe Directions for Blueberry, red currant, bran muffins

  1. Preheat oven to 200 degrees.

  2. Sift flours and cinnamon into a bowl and return the husks to bowl.

  3. Stir in bran, sugar and blueberries.

  4. Place currants, egg, skim milk and egg whites into a another bowl and mix together well.

  5. Pour into dry mixture and mix until just combined, but still lumpy. Do not overmix.

  6. Spoon into muffin wholes and bake for 20 mins.
