Recipe Ingredients for Blueberry quick bread

1 3/4 cups whole-wheat flour
1/2 cup sugar
2 tsp lemon zest
2 tsp baking powder
1/2 tsp baking soda
1/2 teaspoon salt
1 1/2 cups frozen blueberries
8 ounce yogurt
1 egg
2 tbsp melted butter

Recipe Directions for Blueberry quick bread

  1. Preheat oven to 375F.

  2. Spray non stick loaf pan (8 1/2 x 4 1/2 or 9 x 5) with cooking oil spray.

  3. In bowl, mix .5 cup sugar, flour, baking powder, baking soda, lemon zest and salt. Stir in blueberries.

  4. In a separate bowl beat egg, yogurt and butter and add to flour mixture.

  5. Stir until moistened - batter will be very thick.

  6. Put into prepared loaf pan.

  7. Bake 50 minutes or until an inserted toothpick comes out clean.

  8. Cool 5 minutes, then invert on wire cooling rack and cool completely.
