Blueberry Pumpkin Mini Muffins Recipe

Moist little mini muffins. Nutrition info is per muffin but it is reasonable to eat several as a serving and also very likely :)

Recipe Ingredients for blueberry pumpkin mini muffins

1 1/3 cup whole wheat flour
3/4 cup self-rising flour
2 t baking powder
1/2 t baking soda
1 t cinnamon
2 small ripe bananas
15 oz pumpkin
1/3 cup light brown sugar
2 eggs
1 t vanilla
1 cup blueberries

Recipe Directions for blueberry pumpkin mini muffins

  1. preheat oven to 375 F

  2. whisk dry ingredients together in a large bowl

  3. mash bananas in a medium sized bowl

  4. add remainder of wet ingredients (including brown sugar) to bananas and mix

  5. pour wet ingredients over dry ingredients and stir just until blended

  6. carefully fold in blueberries

  7. divind among paper lined mini muffin tin

  8. bake for 15 - 20 min until risen and golden brown

  9. turn out onto a wire rack to cool

  10. may be stored in an airtight container for up to 3 days or you may freeze them
