Recipe Ingredients for Blueberry Protein Pancakes

2 cup, unthawed Blueberries
6 tsp Agave Syrup
0.5 cup (8 fl oz) Water
1 cup 1% Lowfat Cottage Cheese, Small Curd, No Salt Added
8 oz Plain Nonfat
1 cup Flour
2 large(50 g) Egg, Whole
2 large Egg, White
1 fruit (2-1/8" dia) Lemons
0.06 tsp Sea Salt
0.5 tsp Baking Soda

Recipe Directions for Blueberry Protein Pancakes

  1. Combine blueberries, agave and water in a saucepan and cook over low heat for 10 minutes, stirring often, until the blueberries begin to break apart.

  2. Heat a skillet with nonstick spray over medium high heat.

  3. Beat together the cottage cheese, yogurt, eggs, lemon juice.

  4. In a separate bowl, blend the flour with the salt and baking soda.

  5. Add to the dairy mixture and stir just until blended.

  6. Drop a little more than 1/4c batter onto hot skillet. Flip when tops begin to bubble, 3-5 minutes. then cook the second side until browned. Serve with warm blueberry compote.
