This is based on 16 slices- but make them smaller for less calories. This is a special occassion treat!

Recipe Ingredients for blueberry pound cake

6 eggs
1 pound unsalted butter
3 cups sugar
1/2 tsp salt
1 tsp baking powder
4 cups all purpose flour
2 tsp lemon extract
1/4 cup lemon juice
1/2 cup skim milk
1/2 cup 2% milk
3 cups blueberries

Recipe Directions for blueberry pound cake

  1. Preheat oven to 350

  2. mix softened unsalted butter and sugar on high speed until light anf fluffy

  3. add eggs one at a time mixing after each addition

  4. in a seperate bowl sift flour, baking powder and salt

  5. in a seperate bowl mix milk, lemon extract, lemon juice and the zest of one zemon

  6. alternatively mix dry and wet with butter/sugar by hand starting and finishing with dry.

  7. Fold blueberries in with last of dry, mix just until combined- do not overmix.

  8. Pour into bundt pan- filing only to 3/4 from top- bake for 45-55 min until sharp knife inserted in center comes out clean

  9. -if you have extra make cupcakes- cook for about 20 min
