The recipe is from the book Eat More, Weigh Less. One serving is equal to two pancakes. I halved this recipe and used three small egg whites and it worked well.

Recipe Ingredients for Blueberry Pancakes

0.75 cup Whole Wheat Flour
0.5 cup Buckwheat Flour, Whole-groat
0.5 cup raw Wheat Bran
0.5 tsp Baking Powder
0.5 tsp Leavening Agents, Baking Soda
8 oz Greek, Non-Fat, Plain Yogurt
8 fl oz Original Almond Breeze Unsweetened
2 tbsp Honey, Strained Or Extracted
1 tbsp Vanilla Extract
5 large Egg, White
3 cup Blueberries

Recipe Directions for Blueberry Pancakes

  1. In a large bowl, combine the whole wheat flour, buckwheat flour, wheat bran, baking powder, and baking soda.

  2. In a separate bowl, combine the yogurt, milk, honey, and vanilla. Stir the yogurt mixture into the flour mixture and mix until smooth.

  3. In a large bowl, beat the egg whites until just stiff and fold into the batter. Gently fold in the blueberries.

  4. For each pancake, ladle 1/4 cup of batter onto a hot, nonstick griddle or saute pan. Cook over medium heat until golden brown. Flip and cook on the second side. Serve immediately.
