Recipe Ingredients for Blueberry Pancakes

3/4 cup flour
1/4 cup buckwheat flour
1/4 cup whole wheat flour
2 tbsp cornmeal
1 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
2 eggs
2 tbsp butter
1 cup 2% milk
1 cup blueberries

Recipe Directions for Blueberry Pancakes

  1. Mix dry ingredients in a bowl.

  2. Beat eggs, milk and melted butter in another.

  3. Mix the two together - don't stir too much.

  4. Fold in blueberries and cook on a hot lightly greased griddle.

  5. Serve with butter and maple syrup.

  6. *You can also slice some banana on top of each while cooking before you flip the pancake.

  7. To cut down on fat, use egg beaters or just egg whites.
