Recipe Ingredients for Blueberry Pancakes

1 cup Heart Smart Bisquick, Baking and Pancake Mix
2 tbs egg substitute
2/3 cup nonfat milk
3/4 cup fresh or frozen blueberries, defrosted and drained of excess liquid (you may save it to stir into syrup if you'd like)

Recipe Directions for Blueberry Pancakes

  1. Spray a griddle with nonstick spray, and turn to medium heat so that it is warming up while you mix batter.

  2. Mix all ingredients except blueberries, so that batter is smooth and free of any clumps.

  3. Gently stir blueberries in last.

  4. Pour four pancakes at a time, allowing time for two batches (recipe will make 8 pancakes).

  5. Flip pancakes when bubbles appear on surface, and allow other side to brown slightly and pancake to fluff.

  6. Serve with light pancake syrup, with defrosted blueberry juice stirred in if you'd like.
