My mother-in-law's pancake recipe

Recipe Ingredients for Blueberry Pancakes

3 tsp Ener-g egg replacer
5 tbsp butter
1 cup soy milk
1 1/4 cups flour
1 tbsp sugar
2 tsp baking powder
3/4 tsp salt
1/4 cup fresh blueberries
1/4 cup maple syrup
1 tbsp vegan butter spread

Recipe Directions for Blueberry Pancakes

  1. Prepare the egg replacer.

  2. Put the butter and milk in a small pan and warm over low heat until the butter has melted. Cool and then add to the egg replacer.

  3. In another bowl, stir together the flour, sugar, baking powder, and salt.

  4. Pour the egg mixture into the flour mixture and stir only until moistened. Don't overmix.
