Blueberry pancakes. Makes approximately six 1/2 c. servings.

Recipe Ingredients for Blueberry Pancakes

1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp sugar
1 1/4 cups 2% milk
1 egg
3 tbsp butter
1 cup blueberries

Recipe Directions for Blueberry Pancakes

  1. In a large bowl, sift together flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg, and melted butter. Mix until smooth.

  2. Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using 1/2 c. for each large sized pancake. Brown on both sides and serve hot.
