Yummy blueberry pancakes ... from scratch!

Recipe Ingredients for Blueberry Pancakes

1 large egg
1 cup fat free milk
2 tablespoons extra virgin olive oil
1 cup flour
1 tablespoon sugar
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup blueberries

Recipe Directions for Blueberry Pancakes

  1. Beat the egg

  2. Add the rest of the ingredients in order listed

  3. Heat a skillet or griddle (splash with a few drops of water to test temp -- if it sizzles you are good to go)

  4. Use 1/3 or 1/4 cup to measure out pancakes (the smaller the cup size the smaller the pancake and the more pancakes you will get)

  5. Pour onto the heated cooking surgace

  6. When it has risen and you see bubbles (but before the bubbles pop) flip the pancake over and cook until golden brown
