Pancakes can actually be healthy and delicious. If you don't like blueberries, you can nix them or add one of the following instead: 1 cup mashed bananas; 1/2 cup chocolate chips; 1/3 cup granola; or 1/2 tsp cinnamon and 1/4 tsp nutmeg.

Recipe Ingredients for Blueberry Pancakes

2 cups baking mix
1 cup skim milk
2 eggs
2 tbsp lemon juice
4 tsp sugar
2 tsp baking powder
1 cup blueberries

Recipe Directions for Blueberry Pancakes

  1. Stir all the ingredients together.

  2. Pour scant 1/4 cupfuls on to hot griddle with oil.

  3. Cook until edges are dry.

  4. Turn and cook until golden.
