Blueberry Pancakes Recipe

Judy's recipe - can be halved or doubled. I used frozen blueberries, but can use fresh, won't need quite as long to cook. I cooked them in peanut oil. No oil added to recipe but you could add some if you don't mind the extra fat.

Recipe Ingredients for Blueberry pancakes

1/2 cup all purpose flour
1/2 cup whole wheat flour
2 eggs
1 cup skim milk
1 tbsp white sugar
1/2 tsp salt
1 tsp baking powder
2 tsp wheat germ
2 tsp ground flax seed
1/2 cup blueberries
1 tbsp peanut oil

Recipe Directions for Blueberry pancakes

  1. Stir together all dry ingredients.

  2. Stir in blueberries.

  3. Mix wet ingredients.

  4. Stir wet into dry ingrients just until mixed.

  5. Cook in preheated pan with a bit of oil til dry on edges and bubbles appear in middle, then turn over and cook about another 2 minutes (should be golden brown on both sides)

  6. Makes 4 large pancakes.
