Recipe Ingredients for Blueberry-Oatmeal Protein Whole-Wheat Muffins


Dry Ingredients:
132 g whey protein powder
1 cup Whole Wheat Flour
1 tbsp baking powder
1/2 tsp of salt
1/8 cup No Calorie Splenda, to taste
1 1/2 cups water
51 g dried blueberries
1/2 cup Unsweetened Applesauce
1 egg, beaten
40 g oatmeal

Recipe Directions for Blueberry-Oatmeal Protein Whole-Wheat Muffins

  1. Sift together dry ingredients.

  2. Bring dried blueberries and water to a boil, simmer for one minute, then let stand until blueberries are hydrated.

  3. Drain off water into applesauce and let cool.

  4. Add water mixure to dry ingredients and taste for sweetness, adding more splenda if needed.

  5. Add oatmeal and egg, stirring just until mixed.

  6. Pour into prepared muffin tin and add blueberries.

  7. Bake at 375F until lightly browned, 15 minutes or less.
