The muffins are a great way to use up leftover cooked oatmeal. Sugar can be reduced and different flours can be used to add extra fiber.

Recipe Ingredients for Blueberry Oatmeal Muffins

1 cup whole wheat flour
3/4 cup all purpose flour
3 tablespoons raw sugar
4 teaspoons baking powder
1 tsp salt
1/2 tsp cinnamon
2 eggs
1 cup skim milk
2 cups cooked steel cut oats
1 tsp pure vanilla extract
1 cup Blueberries
2 tablespoons canola oil

Recipe Directions for Blueberry Oatmeal Muffins

  1. Mix the wet and dry ingredients separately. Incorporate them together and fold in blueberries.

  2. Pour into muffin tins or into a loaf pan and bake at 350C for 25-30 minutes or until golden brown.
