Recipe Ingredients for Blueberry Oatmeal Muffins

1 cup rolled oats
1 cup buttermilk
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup brown sugar
1 egg
1/4 cup canola oil
1 cup blueberries

Recipe Directions for Blueberry Oatmeal Muffins

  1. Combine oats and buttermilk in small bowl and let stand.

  2. Combine dry ingredients in a large bowl and stir well to blend.

  3. In another bowl beat egg and add oil. Add this to oat mixture.

  4. Add liquid to dry ingredients and mix just to combine. Gently fold in blueberries. Bake at 400F for 20-22 min.
