Recipe Ingredients for Blueberry Oatmeal Muffins

1 1/4 cups rolled oats
1 cup whole wheat pastry flour
1 tbsp cinnamon
2/3 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk, low fat
1 egg
1/2 tsp vanilla
1/4 cup olive oil
1 1/2 cups blueberries

Recipe Directions for Blueberry Oatmeal Muffins

  1. Combine oats, flour, cinnamon, sugar, baking powder, salt.

  2. Add and mix until moist the milk, egg, vanilla, and oil.

  3. Fold in the blueberries.

  4. Sprinkle with sugar if desired.

  5. Bake at 400 degrees for 15 minutes, more if center is still moist.
