Recipe Ingredients for Blueberry Oatmeal Muffin

1.5 cup dry Quick Quaker Oats
1 cup Milk, Lowfat, Fluid, 1% Milkfat
0.5 cup, packed Sugars, Brown
2 tbsp Honey, Strained Or Extracted
0.5 cup Applesauce
2 large Egg, Whole
1 tbsp Vegetable Oil, Canola
1 tsp Vanilla Extract
0.5 cup Whole Wheat Flour
1 Teaspoon Baking Powder
0.5 tsp Leavening Agents, Baking Soda
0.5 tsp Salt, Table
1 cup Blueberries

Recipe Directions for Blueberry Oatmeal Muffin

Preheat over to 400. Lightly spray muffin tin with cooking spray. Place oats in food processor or chopper and pulse a few times. Soak oats in milk for about 30 minutes. In a medium bowl combine brown sugar, honey, applesauce, vanilla, eggs and oil and mix well. In a third bowl combine flour, salt, baking powder, baking soda with a whisk to combine. Combine oats and milk with sugar, applesauce mixture and mix well. Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries. Spoon into the muffin tin and bake for 22-24 minutes. Enjoy!!
