Recipe Ingredients for Blueberry Oatmeal Breakfast Cake

1 1/3 cup all-purpose flour
3/4 cup oats, quick cooking
1/3 cup Splenda
2 tsp baking powder
1 pinch of salt
3/4 cup skim milk
1/4 cup unsweetened applesauce
2 tbsp cornstarch
1 c frozen blueberries

Recipe Directions for Blueberry Oatmeal Breakfast Cake

  1. Preheat oven to 400 degrees F.

  2. In medium mixing bowl, combine flour, oats, vegan sugar, baking powder and salt.

  3. In another bowl, combine soy milk, applesauce and cornstarch. Pour this wet mixture into the dry mixture all at once.

  4. Stir until just moistened (batter will be lumpy).

  5. Fold in the blueberries, spoon batter into a non-stick 8 x 8 baking pan.

  6. Bake 20 - 25 minutes, cool on rack 5 - 10 minutes, serve warm.
