1/4 cup low-fat cottage cheese
1 large egg
1/2 tsp vanilla
1 tsp cinnamon
1/2 cup blueberries

  1. combine all ingredients except blueberries in a blender or food processor.

  2. blend or pulse until smooth

  3. gently stir in blueberries

  4. heat a large nonstick skillet or griddle over med heat

  5. coat pan with cooking spray

  6. spoon 2 tbsp and cook for 3 minutes on each side

  7. serve with maple yogurt
