Blueberry and Oat Muffins Recipe

Healthy muffins that even my husband likes. I adapted this recipe from DONA1012 on SparkPeople. NOTE: I've used several different kinds of oil in this recipe...coconut, olive and grapeseed. I think any kind will work. ALSO, I usually use 1/4-1/3 cup of Splenda. Use to your own taste.

Recipe Ingredients for Blueberry and Oat Muffins

1 1/4 cup Oats, Regular And Quick And Instant, Unenriched
8 tsp No Calorie Sweetener
1 teaspoon Baking Powder
1/2 tsp Baking Soda
1 tsp Vanilla Extract
4 fl oz Vanilla Almond Milk, Unsweetened
1/4 cup Egg Beaters
1 tbsp Grapeseed Oil
1 cup, thawed Blueberries
0.08 tsp Salt, Table

Recipe Directions for Blueberry and Oat Muffins

Grind oatmeal in blender until it's a course flour consistency. Mix with remainder of dry ingredients. Add liquid ingredients and stir just until mixed. Fold in Blueberries. Spoon into muffin pan sprayed with non-stick spray. (12 for mini muffins, 6 for regular.) Bake 375 for 12-15 minutes. These muffins do not get very brown on top.
