Quick and easy breakfast when frozen and popped in microwave.

Recipe Ingredients for Blueberry Oat Muffins

3/4 cup skim milk
1 cup oatmeal
1 cup flour
1/4 cup brown sugar
2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 cup egg substitute
1/4 cup applesauce
1 1/2 cup blueberries

Recipe Directions for Blueberry Oat Muffins

  1. 1 Preheat oven to 400*, spray muffin tins with Pam cooking spray or use muffin tin liners.

  2. In medium bowl, combine all dry ingredietns. In a seperate bowl, mix wet ingredients and add to dry mix. Do not overmix (will be slightly lumpy). Divide evenly into prepared muffin pans. Bake 18-20 minutes or until a toothpick inserted in center comes out clean.

  3. Allow to cool on wire racks.

  4. Can be frozen and popped in microwave for easy and quick snack or breakfast
